Cookd masalas for rice flour

Method

  1. 1

Get ready. Wash the tomatoes, green chillies, curry leaves and coriander leaves. Peel and thinly slice the onions, chop the tomatoes and coriander leaves, and slit the green chillies.

  2. 2

Make the dough. Reserve a little oil for greasing, then boil 650 ml water with the salt and remaining oil for 3 to 4 minutes until it bubbles well. Add it little by little to the roasted rice flour and mix with a spoon, then knead for 5 minutes into a soft, smooth dough while it is warm.

  3. 3

Bring 1 litre water to a boil in a steamer on high flame for 5 to 7 minutes until it bubbles well. Grease the idiyappam press and idli plates with the reserved oil, then press the dough in small circles onto the plates. Place the plates in the steamer and steam on medium flame for 8 to 10 minutes until the strands are firm and no longer sticky.
