Cookd masalas for moong dal
Method
Rinse the moong dal well. Soak it in water for 2 hours until the grains are soft and break easily when pressed. Drain fully. Meanwhile, peel and mince the ginger, and finely chop the onion, green chilli and coriander leaves.
Grind the drained dal with water, crushed cumin, turmeric and asafoetida in a mixie until mostly smooth. Mix in ginger, green chilli, onion, coriander leaves and salt. Rest the thick, flowing batter for 10 minutes until the onion softens slightly.
Heat a tawa on medium flame for 2 minutes until hot but not smoking. Stir the batter once; it should pour easily but not be watery.
Pour one ladleful of batter on the tawa and spread it into a thin round chilla. Drizzle 1/2 tsp oil around the edges and cook for 2 minutes until the edges loosen and the underside has brown spots. Flip and cook for 1 to 2 minutes until no wet lentil batter remains.
Repeat with the rest of the batter, using the remaining oil. Cook each chilla for 2 minutes on the first side and 1 to 2 minutes after flipping, until both sides have golden-brown spots. Makes about 4 medium chillas; serve hot.
