Cookd masalas for moong dal
Method
Rinse the moong dal well. Soak it in water for 60 minutes until the grains are softened and have no hard bite.
Drain the soaked moong dal in a colander for 3 to 5 minutes until no water drips. Wash the cucumber, coriander leaves and curry leaves. Chop the cucumber, coriander and green chilli, and grate the ginger.
Combine the drained dal, cucumber, grated coconut, coriander leaves, green chilli and ginger in a clean bowl. Mix gently for 2 minutes until evenly combined.
Heat oil in a small tadka pan on medium heat for 1 minute. Add mustard seeds and let them crackle, then add curry leaves and asafoetida. Fry for 1 minute until the curry leaves sizzle, then pour the tempering over the salad.
Add lemon juice and salt just before serving. Mix for 1 minute until the salt is spread through, and serve immediately before the cucumber releases water.
