Cookd masalas for mutton
Method
Get ready by slicing three onions, keeping two for cooking and one for the filling. Chop the tomatoes and coriander leaves, and slit the green chillies.
Mix the refined flour, dough salt and 1 tbsp oil. Add the kneading water little by little and knead for 6 to 8 minutes until the dough is soft and smooth; cover and rest for 20 minutes. In another bowl, mix the mutton with curd, ginger garlic paste, turmeric powder, red chilli powder and salt. Cover and marinate for 30 minutes.
Heat 2 tbsp oil in a pressure cooker on medium flame. Add the cinnamon and cloves, followed by two sliced onions and the green chillies. Fry for 5 to 6 minutes until the onions turn light golden.
Add the tomatoes, Cookd Mutton Masala and coriander powder. Cook on medium flame for 5 to 6 minutes until the tomatoes are soft and the raw smell goes.
Add the marinated mutton and cook on medium flame for 4 to 5 minutes until it changes colour. Add the cooking water and salt, close the cooker and pressure cook for 5 whistles on medium flame. Let the pressure release naturally, then simmer uncovered for 8 to 10 minutes until the mutton is tender, there is no pink meat near the bone and the thick masala only coats the meat. If the mutton is still firm, add a little water and pressure cook for 1 to 2 more whistles.
Shred the cooked mutton and discard all the bones. Mix the sliced onion, lemon juice, coriander leaves and salt in a bowl. Mix the shredded mutton with all the thick masala until the filling holds together.
Divide the rested dough into 4 equal balls and roll one ball into a thin circle. Heat a tawa on medium flame and cook it with a little paratha oil for 1 to 2 minutes on each side until golden spots appear and no raw dough remains. Repeat with the other dough balls to make 4 parathas.
Whisk one egg with one-fourth of the egg salt. Pour it on the hot tawa and place one paratha over it. Cook on medium flame for 1 minute until the egg sets, then flip and cook for 30 seconds until no runny egg remains.
Place one-fourth of the mutton filling and onion mixture in the centre of the egg side. Roll the paratha tightly and wrap the bottom with paper. Repeat with the remaining eggs, parathas and filling to make 4 rolls.
