    Bring a pot of water to a boil and add salt. Add the spinach and cook for just 20 seconds. Remove it from the pan into a bowl of cold water.

    Grind into a smooth paste. Add it to the dosa batter and mix well.

    Heat the oil in a pan and add the urad dal, chana dal and dry red chillies. When the dals start to change their colour, add the garlic and onion. When the onion turns translucent, add the tomatoes and salt. Cook until the tomatoes have softened.

    Add the tamarind and turn off the stove. Allow it to cool, then blend into a paste.

    Spread the dosa batter on a tawa, just like a regular dosa. Cover and allow it to cook for 45 seconds on medium heat. Open the lid and apply some ghee around the edges. Apply a spoon of the chutney and then grate some paneer on top. Fold in half and then remove the dosa from the pan. Serve hot & enjoy!
