    For the vada, drain the soaked channa dal and add it to a blender along with all the other ingredients for the vada and blend into a very coarse paste without adding any water.

    Deep-fry the batter into small vadais, making sure not to over-fry them. The vadai needs to be slightly soft so that it absorbs the gravy. Set the fried vadais aside.

    In a pan, roast all the ingredients except the coconut until golden brown and aromatic. Add in the coconut at the end and switch off the heat. Let the ingredients cool down and blend into a smooth paste.

    In a kadhai, pour oil and add the whole spices and toast until fragrant. Add the coriander and mint leaves, then add the onions and saute on a high flame for 3-4 minutes or until translucent and aromatic. Add in the tomatoes and cook on a medium flame for 3-4 minutes or until the tomatoes turn mushy and soft. Add in all the powdered spices, and saute for a minute on medium flame or until the raw flavour disappears.

    Pour the prepared paste and mix thoroughly. Pour water and bring it to a boil. Cover and cook on a medium flame for 15 minutes, stirring occasionally. Add in the prepared vadais and mix, cook for 1-2 more minutes until the vadais soak up the gravy and thicken. Garnish with coriander leaves.

    In a mixing bowl, add in dosa batter, baking soda and curd along with some turmeric powder and mix thoroughly. The batter should be a little looser compared to a regular dosa batter.

    Ladle in the batter, cover and cook on a low flame for 2 minutes or until thoroughly cooked and soft. Serve hot with the vada curry
