Cookd masalas for chicken curry cut
Method
Wash and soak the rice for at least 20 minutes
To make the chettinad thokku, heat a pan on medium flame. Once hot, add oil along with curry leaves. Once they splatter, add the onions and saute for 5-6 minutes or until softened and lightly browned. Add in the chicken and saute for 2 minutes.
Add in the Cookd Chettinad Masala and mix to coat the protein. Add the water to the pan and bring it to a simmer on a medium heat. Cook it covered for 10-12 minutes. Let the gravy reduce on a high heat, while mixing continuously, to make a thick gravy.
In a preheated pressure cooker, add your biryani paste and saute it for 2 minutes on a medium heat. Then add in the water and bring the mixture to a boil. Add in your soaked rice and give it a mix.
Close the cooker and cook on a medium heat for 2 whistles. Once cooked, allow the pressure to release naturally, this also allows the biryani to rest. Add the seasoning oil to the biryani and fluff. Serve the biryani topped with the thokku. Enjoy hot!
