Method
Rinse the moong dal. Soak it in 250 ml water for 60 minutes until it is soft enough to bite but not mushy, then drain it well. While it soaks, wash the cucumber, coriander leaves, green chilli and curry leaves. Dice the cucumber, finely chop the coriander and chilli, and grate the coconut.
Add the drained moong dal, cucumber, coriander leaves, green chilli, coconut and salt to a bowl. Mix gently until everything is combined and the salt is spread evenly.
Heat the oil in a small kadai on medium flame for 1 minute until hot. Add the mustard seeds, curry leaves and asafoetida. Fry for 1 minute until the mustard seeds pop and the curry leaves turn crisp.
Pour the tempering over the salad and add lemon juice. Mix well and serve at once, while the cucumber is still firm.
