Cookd masalas for mutton

Method

  1. 1

Get ready: Whisk the curd. Wash the curry leaves and coriander leaves, slit the green chillies, chop the coriander leaves, and cut the lemon into wedges. Pat the cleaned mutton dry.

  2. 2

Add the mutton, water, salt and turmeric powder to a pressure cooker. Pressure cook on medium flame for 4 whistles, until the mutton is tender and no pink meat remains near the bone. If it is still tough or pink near the bone, pressure cook for 1 more whistle. Let the pressure release fully, then drain the mutton and cool it for 5 minutes.

  3. 3

Add the cooked mutton, curd, Cookd Madras 65 Masala, red chilli powder, ginger garlic paste, lemon juice, corn flour, rice flour and salt to a bowl. Mix until every piece is coated. Marinate for 20 minutes so the coating sticks to the mutton.

Heat the oil in a kadai on medium flame for 4 to 5 minutes. Drop a little coating into the oil. It should rise slowly with small bubbles.

  5. 5

Fry the mutton in about 3 batches on medium flame for 4 to 5 minutes per batch, taking 12 to 15 minutes in total. Turn the pieces often and do not crowd the kadai. Fry until the coating is crisp and the mutton is hot through, then remove it to a plate.

  6. 6

Add the curry leaves and green chillies to the same hot oil. Fry on medium flame for 1 minute, until the curry leaves are crisp, then remove them.
