    To a bowl, add the soya, salt, turmeric powder and hot water and press it down. Let the soya soak in hot water for 10 minutes. Strain and squeeze the extra water out of the soya and keep it aside

    Heat oil in a pan, add curry leaves and let it crackle. Add onions and saute till it turns soft and translucent. Add the soya and the cookd madurai chukka masala, mix and cook it for 2 minutes.

    Add water and mix well. Bring the mixture to a boil. Cook the mixture till the mixture becomes a thick masala and coats the soya. Garnish with coriander leaves and serve it hot.
