    Wash and soak the kaima rice for 20 minutes.

    In a pot, bring 2L water to a boil with 1 tbsp (12g) of salt. Add the soaked and strained rice and give it a mix. Boil for 5 - 6 mins, until the rice is 75% done. Strain and reserve the cooking water

    In a biryani pot, add the malabar biryani paste and saute for a minute. Add the mutton and mix with the paste for a minute. Add 2 ½ cups of water and cook for 45 - 60 minutes on a medium flame, or until the mutton is tender. Add more water if neded. Stir and reduce until the consistency is thick again.

    Layer the rice on top of the biryani paste Add fried onions, coriander leaves, mint leaves and fried cashews as garnish. Cover tightly and cook on dum for 12-15 mins then allow it to rest for 10-15 mins.
