Cookd masalas for toor dal
Method
Get ready by rinsing the dal. Wash the tomato, brinjal, drumstick, green chillies, curry leaves and coriander leaves. Peel the shallots, chop the tomatoes, cube the brinjal, slice the drumstick, slit the green chillies, break the dry chillies and finely chop the coriander leaves. Soak the tamarind in warm water for 10 minutes, then squeeze and strain the pulp.
Add the dal, water, turmeric and salt to a pressure cooker. Pressure cook on medium heat for 4 whistles. Let the pressure release naturally for about 10 minutes until the pin drops, then open the cooker. Check that the dal is very soft and mash it until smooth.
Heat oil in a kadai on medium heat for 1 minute until hot. Add the shallots, green chillies, curry leaves and tomatoes. Fry for 5 to 6 minutes until the shallots soften and the tomatoes turn mushy.
Add the brinjal, drumstick and water. Cover and cook on medium heat for 10 to 12 minutes until the vegetables are tender but still hold their shape.
Add the tamarind pulp, Cookd Sambar Masala and salt. Boil on medium heat for 6 to 8 minutes until the raw tamarind smell goes.
Heat oil in a small pan on medium heat for 1 minute until hot. Add the mustard seeds, cumin, dry red chillies and asafoetida. Fry for 1 to 2 minutes until the mustard seeds crackle, then pour the tempering into the sambar.
Add the mashed dal and mix well. Simmer on low heat for 5 minutes until the sambar is smooth and lightly thick.
Turn off the heat and mix in the coriander leaves. Rest the sambar for 5 minutes before serving.
