    To a pan with a little oil, add your curry leaves. Once they've crisped up, add in your onions and green chillies and cook until they soften and turn lightly golden. Then add in the mutton and sauté on a high heat.

    Once almost all the water from the mutton has evaporated, add in your Cookd Madurai Chukka Masala and mix to combine thoroughly. Add in the water and allow it to come to a simmer. Cook for 35 minutes or until the mutton is completely cooked and tender. Reduce the gravy until it is very thick.

    Add the rice to the pan and toss to coat with the gravy. Add salt, black pepper, ghee, lemon juice, and coriander leaves. Mix the rice to combine the flavour.

    Over an open flame, heat the banana leaf until it becomes malleable and flexible. Place the kari soru on the banana leaf and wrap it tightly to encompass the rice. Place the wrapped rice on a hot tawa and cook it for 5 minutes on each side, on a medium high heat. Once lightly browned on both sides remove from the heat and let it rest for 2 minutes before cutting it open and enjoying!
